Chicken Salad with
4 cups 1-inch cubed cooked chicken
1 cup dried blueberries
1/2 cup cashews
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
Salad greens, torn into bite-sized pieces
Combine chicken, dried blueberries and cashews together in a large mixing bowl.
In a small mixing bowl, combine mayonnaise, sour cream, lemon juice,salt and pepper; add to chicken mixture and toss well. Cover and refrigerate.
Serve on a bed of torn salad greens.
