Crunchy Butter Cookies For The Cookie Press
1/2 cup butter
1/2 cup sugar
1 egg, extra large
1 3/4 cup cake flour or 1 2/3 all-purpose flour
1/2 cup yellow corn flour (milling grade #400, just slightly grainy)
Melted chocolate for dipping
Cream butter with sugar, then add the egg and beat until smooth. Mix the corn flour and the flour together in a separate bowl, and blend into the moist ingredients at slow speed, again until smooth.
Drop onto greased cookie sheet with a cookie press. Bake at 375 F for 15 minutes.
They are delicious plain, but it's nice to dip a few in melted milk chocolate.
