Bailey's Irish Cream Cheesecake
1 cup Oreo crumbs
¼ cup butter
2 250g packages cream cheese
¾ cup Bailey’s Irish Cream
½ cup whipping cream
1 tablespoon Irish Cream
Milk chocolate medallions
Combine crumbs and butter, press onto bottom of 9-in greased spring form pan.
Beat cream cheese until fluffy. Gradually beat in sugar and flour. Add eggs one at a time, beating well after each addition. Stir in ¾ cup Irish Cream. Pour into prepared pan.
Bake at 350 F for 10 minutes; reduce heat to 200 F and bake for an additional 50 minutes.
Cool; chill at least 2 hours.
Before serving, combine whipping cream and 1 tablespoon Irish Cream and whip until stiff. Garnish cheesecake with whipped cream and decorate with chocolate medallions.
