Nouvelle Cuisine Thanksgiving
1 whole boned and skinned chicken breast or one Turkey breast
2/3 cup pecans
2/3 cup maple syrup
1 teaspoon corn starch
3/4 red pepper, cut in squares
Optional: commercial tempera batter
Oil for deep frying.
Cut chicken in thin flat pieces. Coat in flour or tempera batter, and deep fry until golden. Drain and set aside.
Placing pecans in deep frying basket, deep fry at low heat for 20-30 seconds. Drain and pat dry.
Mix corn starch in maple syrup
Put one teaspoon oil in frying pan, stir-fry red pepper for 2 minutes. Add maple syrup mixture and heat until slightly thickened (like a sauce). Combine with chicken and pecans, serve immediately.
