Potato Salad

Ingredients:
2 lbs potatoes
2 spring onions, finely chopped, or ½ onion
½ stick celery, finely chopped
1/2 cup mayonnaise
2 pieces bacon, cooked crisply
1 teaspoon sweet paprika
¼ teaspoon turmeric
¼ teaspoon dry mustard
salt to taste

Garnish:
3 hard-boiled eggs, quartered


Instructions:
Boil potatoes, drain and cool. Take care not to over cook.
Combine all other ingredients, then garnish with hard-boiled eggs.
