475 g Marscapone (approx. 1 lb)
1 cup sugar
1 1/2 cup coffee
Napoleon brandy to taste
About 30 Savoiardi cookies
Separate egg yolks from egg whites.
Beat eat whites until fluffy.
Beat egg yolks until thick and pale, then beat in sugar, and then Marscapone.
Fold in egg whites into Marscapone mixture. Soak bottom half of savoiardi in coffee and brandy mixture.
Spead one layer savoiardi, one layer cream, one layer savoiardi, one layer cream.
Sprinkle with cocoa using a strainer.
