Beans with Pork

2 cups white navy beans
1 teaspoon butter or frying oil
lb pork fillet, in cubes
1 cup chopped onions
1 cup coarsely chopped carrots
cup molasses
cup brown sugar
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dry mustard

Wash beans and soak overnight. Heat butter or frying oil in pan, and fry the pork and onions until golden. Add the beans and other ingredients, and enough water to cover the beans. Simmer covered at low heat for 4 hours, stirring occasionally; never boil. If the beans are no longer covered with liquid due to absorption or evaporation, add more water.

Serve hot, with maple syrup.
