Recipe for Beef in Whiskey Sauce
Ingredients: 1 tablespoon butter 5 oz fillet of beef (per person) 2 medium onions, thinly sliced 150 g mushrooms or chestnues, quartered ½ cup reduced beef stock 2/3 cup whiskey 1/3 cup 35% cream salt and pepper 4 tablespoons chopped chives Instructions: Fry steaks and keep warm in oven. “Déglace” and brown onions and mushrooms. Flambé with whiskey, add beef stock. Incorporate the cream and reduce for a few minutes. Season. Garnish steaks with topping and serve. BACK |
