Coconut Cake

8 tbs cocoa
5 tbs sugar
4 tbs water
1 cup milk
4 eggs
1 tsp cream vanilla
1 1/2 cup sugar
2 cups flour
1 tsp cream of tartar
1 tsp salt
1 tsp baking soda


Cook the cocoa, 5tbs sugar and water gently until thick. Stir in 1 cup milk. Separate 4 eggs into whites and yolks. Beat the whites until stiff, and beat in gradually 3/4 cup sugar. In another bowl, cream 1 cup butter, 1 tsp vanilla and 3/4 cup sugar. Beat in the yolks one at a time. Add the cocoa mixture. Beat into the batter the flour, cream of tartar, salt and baking soda. Fold in the egg whites. Pour into 2 9" square pans. Bake at 350F for 35 minutes.
