Thai Green Curry Paste

10 medium green chilies (fresh or pickled)
6 cloves garlic
1 onion
6 coriander plants, chopped
1 “thumb”fresh ginger
1 teaspoon shrimp paste (optional)
1 teaspoon ground coriander
2 teaspoons ground cumin
1 teaspoon salt
˝ teaspoon ground white pepper

Grind in blender or food processor. Add enough water to cover mixture if grinding in blender. Freeze and use when required.
